Protein Cottage Loaf – Fluffy and Nourishing

Don’t be scared of bread! I come to you fully confident with this recipe. Bread is one of the foods that has been labeled as bad for sooo long, causing weight gain, bloating, and only one God knows what else.


I remember the advice of my dad when I was a teenager: “Skip the second toast” or “Skip having bread with your meal”. And this wasn’t because I was a fat or inactive kid, no, it was just preventive. But it left a mark in my head.

My old belief: “I would be better with less bread or without a bread at all”.

​Now I know I could eat everything as long as it makes me feel good, doesn’t upset my stomach and fits my macros.

​Let’s make a deliciously soft and flavorful bread that you can enjoy with your favorite spreads, accompanied with your coffee or tea, with soups, it’s great for a cheese party

100 g Oats (you can also use gluten-free oats)

250 g Cottage

Pumpkin or sunflower seeds (personal preference)


1 tbsp. baking powder

In a large bowl mix all the ingredients and form the bread with hands. You need your oven preheated at 200 °C. Cover the baking tray with baking paper and bake the bread for about an hour.

Note: Depending on your cottage cheese you might need to adjust the ratio of dry and wet ingredients. Don’t be afraid to add more oats or event to include some kind of flour if your cottage is too watery.

Cut into loaf when its cooled down.

The satisfaction of having a loaf of bread that you have created is going to fuel your body in a different way.
