Blackberry Sorbet

Perfect for Hot Summer Days (and Nights!)

Those of you who know me personally, are aware of my unconditional love with ice cream! As much as I love it, 9 times out of 10 I don't please myself with it, because all the recipes for home made ice creams are so overwhelming and difficult to follow.

But this one is perfect for impatient sorbet-lovers like me!

Even if you have never cooked anything, I mean a-n-y-t-h-i-n-g, in your entire life you will get this flawlessly done! I won't stress you with too much ingredients or pre-cooking.

You will tremendously benefit from preparing your own Blackberry sorbet, because you will know what you eat and you won't give your body excess sygar or transfat. Plus, if you're become bored of eating plain fruits, this will give you a pinch of refreshment.

Rinse the blackberries and let them chill in the fridge for 2-3 hours.

Then blend together the berries with the coconut water, lemon juice and stevia until smooth mixture is reached.

Place the mixture in a bowl and add the coconut cream and the coconut flakes.

2 cups blackberries

300 ml coconut water

2 tbsp. fresh lemon juice

1 to 2 tsp. stevia (depending on your taste)

2 tbsp. coconut flakes

2 tbsp. coconut cream

Recipe Notes:

If you want you can flavour the coconut cream with stevia and mix everything in your bowl. I prefer to take a spoon of both seperately.

I would love to know whether you like this sorbet recipe, so please leave any comments or tag me in your photo!

I will leave and eat mine now because it's melting! 🙂
